The knives are exceptionally sharp, but you can't see a noticeable change in the bevel of the blade when you do sharpen them, even though there are filings visible on the diamond steel. Also, you do warn that they may water stain if not dried soon after use, but they do so extremely fast. The shears are somewhat annoying to dry because once you dry, close and open them again, there is a film of water on the blades near the pivot point. For some reason though, no water spots appear. Overall, I am happy with the product, and glad I bought them.

I chose this set because of Calphalon Quality and support. These Katana knives are very sharp, have a good weight and this set had all the knives I really wanted. There is nothing flimsy about any of these knives. They have made cooking much easier. The Nakiri ROCKS! It slices through a large onion like butter. The steak knives are interesting as the front half of blade has ridges but just on one side while the back half of the blade has no ridges. They all work very well. The block is a gorgeous mix of different medium and light tones but I think it is veneers. They are not dishwasher safe so I have to be careful hand washing not to cut myself. So far, I am very pleased with this set.

My wife and I received the smaller knife version of this knife and we were pretty happy with the design, feel, and quality that we decided to go with the larger set. If handled well, these knives can last a good amount of time.

They might not be THE professional grade knife set, but they are still better than you basic $100 or less set.

Concerning price...it is a bit on the pricey side. If it wasn't a Christmas gift, I am not sure if it would have been purchased.
